The soul of a festive gathering, its versatility knows no bounds. Serve it with a dollop of creamy sour cream, a sprinkle of sharp cheddar cheese, and a handful of crunchy tortilla chips for some extra crunch!
INGREDIENTS - CHILI
2 lbs of Crossover Chicken + Beef Blends (6 patties)
1-2 TBSP olive oil
2 cloves garlic, minced
One 8-oz can tomato sauce
2 TBSP Chili powder (1 regular and 1 Ancho chile powder)
1 tsp ground Cumin
1 tsp ground oregano, rub it between your hands when you add it to the pot
1 tsp salt
½ tsp cayenne pepper (more or less to taste)
¼ cup masa harina (or the equivalent in crushed tortilla chips)
One 15-oz can kidney beans, drained and rinsed
One 15-oz can black peans, drained and rinsed
INGREDIENTS - TOPPINGS
Shredded cheddar cheese
Chopped onions or scallions
Tortilla Chips
Sour Cream
Lime wedges
INSTRUCTIONS
Place a large pot over a medium-high flame and add the olive oil and the lay the beef patties in. As the beef starts to soften, start breaking it up with a spatula, spoon or fork. Add the garlic and sauté until browned and no pink remains.
Drain off excess fat.
Add tomato sauce and all of the spices. Stir well, cover and reduce heat to a low simmer for 1 hour. Stir occasionally. If the mixture starts to dry out, add ½ cup of water as needed.
After 1 hour, place the masa harina in a small bowl and stir in ½ cup water with a fork. Add this mixture to the chili and stir well. This helps thicken the chili and give it texture.
Taste and adjust seasonings. Add more water or more masa to adjust the texture to your liking.
Add the beans and simmer 10 minutes.
